Okay, from time to time, I like to share my vast *snicker* knowledge of the kitchen and all the wondrous things I like to cook in it. I have posted a few things in the past (kate cooks) and I've decided to add this one in, too. :)


1 box of cake mix (any flavor)
1 stick of margarine, softened
1 brick of cream cheese (8 oz.), softened
1 egg
1 tsp. vanilla
1 sm. bag white chocolate chips (optional)
Powdered/confectioners sugar (for rolling)

1. Beat the margarine and cream cheese together. (As a side, I'm making a double batch here because I'm actually giving these away for the college students we send Valentine's boxes out to, because I'm awesome.)

2. Beat in the egg and vanilla.

3. Beat in the cake mix. Seriously, this is the easiest way to make cookies ever. They always turn out taaaaaaaaasty.

4. Cover and refrigerate for about 2 hours. It seriously makes it easier to deal with because this cookie batter is seriously the stickiest thing ever.

5. After that long-ass wait, you can pull them out and "fold in" the chips. Now, I usually make my cookies with chocolate cake mix and white chocolate chips, however... this time I decided to use devil's food cake and these red, dark chocolate chips because it's for Valentine's day. Afterwards, my mom and I were like, "Why didn't we do red velvet cake mix and white chocolate chips?!" Yeah, you live, you learn. ;) I've made a lot of different combinations before, so have at it!

6. Now, for this next step, it's super easy if you have the right tool. I use a small ice cream scoop. Seriously, everything is so sticky, it's just a lot easier.

Then, you want to make a scoop and drop it into a bowl full of confectioners sugar. I can usually fit about four scoops in the bowl I use. Once in there, roll them around so they're covered in the sugar.

7. Okay, put them on a cookie sheet. :) As I said before, the right tools are essential. Dude, where have silicon mats been my entire life?!

8. Pop those suckers in the oven for 12 minutes on 350 degrees. When they come out, they're going to look like they're not done. This. Is. PERFECT! Put them on a wire rack to cool and right after you put them on there, douse them with another shot of confectioners sugar. I have a little shaker thing that I use. It's way easier.

I've never actually posted anything on my lj regarding baking, but I should really start. Last night I ended up making homemade pasta (roasted beet ravioli) for the first time (BY HAND!) & I loved it a lot.

I absolutely love to cook, but baking has always been a lot harder for me. There's just so much room for error! So, when I come across a really good, easy recipe like this one, I totally have to share with everyone.

You should definitely post recipes! That ravioli sounds DELICIOUS!!!! <3

We love these cookies too! Especially the lemon ones. I do not even know how but Gabrielle and I ate a whole batch of these one time. It was ridiculous.
